My Zindor does tricks based on hand signs (not American Sign Language, but ones I made up for her). I taught her these using clicker training. You may be able to find a book on clicker training at the pet store or library. You can also find sources of information for clicker training on line.
I have also trained her using voice commands, but she responds quicker to the hand signals and body language.
Also, please be careful with your "bird falling in love with the dog" situation. A dog killed the Nanday of one of the contributors to this board this year. It is not an uncommon thing to happen, because instincts and nature can trump training when it comes to dogs and cats. It was such a sad story, so I don't want that to happen to you and your bird.
