Vegetarian Gravy

3 Tblsp margarine
2 Tblsp finely chopped onion
2  clove garlic, minced
2 Tblsp flour
1 3/4 Tblsp soy sauce
1 cup water
1/8 tsp pepper
2 tsp nutritional yeast (optional)
1/4 tsp dried sage (optional)

Saute onion and garlic in margarine over medium-high heat. Reduce heat to medium when onion and garlic are golden brown. Make a roux by gradually adding the flour, stirring continuously over heat until thick and bubbly. Add soy sauce and water, then pepper, nutritional yeast, and sage. Heat, stirring, until desired thickness.
