Sesame Ramen Noodles

4  3-oz packages ramen noodles
2 cups frozen mixed vegetables
  water for boiling
3  beaten eggs, optional
10 tsp sesame oil
1/4 tsp crushed red pepper
8 tsp soy sauce
4 tsp sugar
2  ramen flavor packets
  vegetable oil for frying

Bring some water to boil in a large pot. Add frozen vegetables and return water to the boil. Add noodles and cook for a little less time than suggested on the package. Drain the noodle/vegetable mixture.

In a wok or large frying pan, heat a little vegetable oil over medium heat. If using eggs, add them and fry, stirring and breaking up large pieces as they form until lightly cooked. Add noodles/vegetables, sesame oil and red pepper. Fry for a few minutes. Stir in remaining ingredients and continue frying and stirring a few more minutes. Serve hot.

Notes: Remaining ramen flavoring packets may be saved for other purposes. Fresh vegetables may be substituted for the frozen ones. I usually use frozen just because it's quick and easy.
