Thin Coconut Milk

4 cups grated coconut meat
2 cups boiling water

Cover grated coconut with boiling water. Transfer the coconut mixture to a blender and process at medium speed for about 20 seconds, or just soak the coconut in the hot water for 20 minutes.

Pour the mixture into a bowl through a fine strainer or double thickness of cheesecloth, squeezing the coconut hard in the strainer until no juice remains. Discard the spent coconut pulp, add a pinch of salt to the liquid in the bowl, and it is ready for use.
