Cheese Sauce

2 Tblsp butter
2 Tblsp flour
1/4 tsp salt
1/8 tsp pepper
  
1 cup milk
  
1/4 tsp dry mustard
1/2 cup shredded Cheddar cheese
  
Makes 1 cup

Melt butter in saucepan over low heat. Blend in flour, salt and pepper. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir one minute. Stir in mustard and cheese. Heat over low heat, stirring constantly, until cheese is melted and sauce is smooth.
