Randy's Vegetarian Cookbook


1  egg, beaten
1 1/2 cups flour
1/2 tsp salt
1 3/4 tsp baking powder
3 Tblsp melted butter
1 cup milk
3/8 cup water
Makes 6 medium-large pancakes

Mix all ingredients. Pour enough batter for one medium-large pancake into a hot buttered frying pan. When top of pancake is all bubbly and edges are getting dry, turn and cook until lightly browned.

Leftovers are delicious eaten cold.
